Monterey Jack cheese

A mild, semi-firm cow's milk cheese from California that melts softly and evenly.

Monterey Jack is a young, pale cow's milk cheese with a mild, slightly buttery flavour that melts smoothly when heated without turning greasy. In North America it is in every supermarket; elsewhere, including the UK and German-speaking countries, look for it at well-stocked cheese counters, shops selling American groceries, or by mail order.

Substitute:

Young Gouda, mild Cheddar or a mix of mozzarella and Gouda melt similarly well; Gouda and Cheddar add a little more flavour, while mozzarella on its own is stringier and blander.
