Chipotle chile

A smoked, dried jalapeño, smoky and assertively hot.

Chipotles are sold dried or canned in adobo sauce, both found in well-stocked supermarkets with an international aisle, in Latin American shops or by mail order. Dried pods are usually soaked briefly in hot water before use, while the canned ones go straight into the dish along with some of their sauce.

Substitute:

Hot smoked paprika topped up with a little cayenne matches the smoke and heat, but not the fruity, raisin-like depth or the body a whole pod gives a sauce.
